"Les Chevalines" is an artist book, that was launched in a horse butcher of the 20th arrondissement in Paris.  

The artist book is the result of ethnographic and archival research and uses the history of eating horse in France to map past and present urban migration to Paris and ethical issues around food and class. It brings together maps, archival images and text, and was part of a curatorial series by Eva Barois De Caevel and Bétonsalon,

The launch was accompanied by a horse tartare and saucisson tasting as well as rosé.
